Aunty Kerry's Hotcakes

Although I've used many pancake recipes, this is one I keep going back to, the hotcakes my Aunty Kerry would make for sleepovers. It uses pantry staples and is always good. The milk powder makes the pancakes extra thick and fluffy, but yes you can use milk instead of the milk powder and water. 

Aunty Kerry's Hotcakes serves 2-3

1/2 cup all purpose flour

1/2 cup whole wheat flour (or extra all purpose)

1/2 cup milk powder

2 & 1/2 teaspoon baking powder

pinch of salt

1 tablespoon sugar

1 egg

1 tablespoon melted butter

1 cup water


Sift flour/s, salt, milk powder and baking powder into a bowl. Stir in sugar.

Melt butter, add water, add egg, whisk to break up egg.

Pour liquid mix into dry mix and stir with a whisk.

Leave mixture overnight to thicken if you can, or make pancakes immediately!

Heat pan to medium-low. Melt butter and add about 1/3 cup pancake batter. Flip when bubbling and fairly well cooked. To speed up cooking, use two pans if you have the space.

Try topping your pancakes with Greek yoghurt, berries and maple syrup. Or bacon, banana and syrup.
